8-9 flesh peaches or 3 bottles of canned peaches
1 teaspoon lemon
1/2 cup sugar
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 1/2 teaspoon of baking powder
1 1/2 cup flour
1/2 teaspoon vanilla
1/4 cup sugar
1/4 cup brown sugar
1 cup boiling water
Lightly grease a 9 by 12 baking dish. Preheat oven to 350 degrees
Peel and slice the peaches and sprinkle with lemon juice then turn once or twice
Cream the butter with the sugar, and vanilla. Add the nutmeg, baking powder and salt with the flour, then add to wet ingredients and mix well. Your dough should be crumbly.
Mix the remaining sugar and water boil on stove until all the ingredients have dissolved.
Pour half of the peaches into the baking pan. Crumble half the dough over top of them. Add the remaining peaches, add liquid. Add remaining peaches, and cruble the rest of the dough over the top. Bake at 350 degrees for 45 minutes or until light brown on the top. If using fresh peaches you will probably need to cook for 1 hour.

Perfect Pie
My favorite Apple Pie
This is my favorite pie, because I have finally succeeded at making a good pie. This is the recipe:
Crust:
3 cups of flour
1 tsp. salt
1 1/3 cup of shortening
Put all ingredients above, in a bowl and crumb together. Make it look like there are little marbles in the bowl. Mix extremely well, then mix the next 3 ingredients together in another bowl. Pour it in the bowl with above ingredients. Mix carefully until all the flour mixture is moistened.
1 egg
1tsp. vinegar
6-7 Tbsp. of cold water
Makes 3-4 9" pie crusts or 2 pie crusts that have tops on them. Roll out crust and put into a pie shell. Make sure the crust is pushed down well and the crust rests on the top lip of pie pan.
Pick out tart apples, such as yellow delicious or lodi. Or pick your favorite tart apple. Filing: 5 cups of apples, 1/4 cup sugar, 1 pinch of nutmeg, 1/2 tsp. cinnamon, 1-1/2 tsp. of lemon juice and 1/4 cup of flour. Mix all together then cook on the stove until all ingredients are mixed together well. You will need to bring it to a boil, but stir constantly, because the ingredients will stick to the pan. By cooking it before you put into the shell your apples will not be chunky., after the pie is cooked. Pour the mixture into pie pan. Slice 1 tbsp. of butter on top of pie. Now you need to roll out some more pie crust. Roll into a round. Make sure the top crust covers the pie pan with about 1/8 of an inch over other shell. Lift up bottom crust and tuck top crust under. Then make a fancy design by twisting the dough with your fingers. Remember practice makes perfect. Bake on 350 degrees for 50 minutes or it may take an hour. Make sure the pie is golden brown.

Rockin' Rolls
Amazing rolls and the recipe is so fun and easy if you have a Bosch Mixer. If not you can do it be hand it will just take longer.
Ingredients:
5 cups of hot water
1 cup powder milk (Optional)
2/3 cup oil or shortening which ever you prefer
2 Tbsp. salt
1/2 cup sugar
3 eggs
3 Tbsp. yeast
Approximately 14 cups of flour
Mix your water and powder milk together. You can use plain water that is what I used for this roll. Mix in 6 cups of flour. Then add your yeast, mix all together. Let set for 5 minutes. Then mix in your oil, salt, sugar and eggs.
Next add your flour. If you have a Bosch just keep mixing until it has all mixed together and the flour you put in cleans the outsides of the Bosch bowl. If you are doing it by hand add 1 cup at a time and mix in. I use a potato masher until it gets to stiff. Then you will need to use your hands. After the dough is mixed for 5 minutes, let rise in the bowl for 5 minutes. It should be sticky but not sticky enough to handle. After you have formed your rolls into balls . I use a 12'by17" cookie sheet. I put 6 rows across with 4 rolls in each row. This recipe should make 2 cookie sheets full. Let rise for 1 to l and 1/2 hours. Then cook in an oven that has been preheated to 350 for 25 minutes or until golden brown.

Gooey German Chocolate Cake
This cake is our families favorite. The recipe is simple and delicious. You will never enjoy a chocolate cake more. The recipe is very runny when you make it, so don't think that you have done something wrong when you pour it in the cake pan.
Ingredients:
2 cups sugar
1 cup oil
1/2 tsp. salt
2 tsp. baking soda
2 eggs
1 tsp. vanilla
1/2 cup cocoa
2 cups flour
1 cup hot water
You do not need to worry about adding the ingredients at a certain time. Just add them all together except the hot water. Mix them together until they are all mixed in, the add you cup of water and mix it through. Pour into a 9"by 12" cake pan or 2-9" cake pans. Bake on 350 degrees for 30-35 minutes of until a toothpick that you stick in the cake comes out clean. You do not need frosting on it, you can just sprinkle some powder sugar over it.
Here is the frosting recipe, it is one of my husbands favorite. 1 can evaporated milk, 1 1/4 cup sugar, 4 slightly beaten egg yolks. 3/4 to 1 stick of butter, 1 tsp. vanilla, 1 cup walnuts (pecans will do as well) 2 cups coconut. Cook and stir over medium heat. Add all ingredients except nuts and coconut. Stir until it boils. It takes about 12 minutes of cooking for it to be done. I needs to boil for a few minutes so don't take it off the burner just because it is boiling. Just stir constantly.

Cafe Rio Style Pulled Pork
For this recipe you will need to purchase 3 lbs. of boneless pork. It isn't necessary to purchase boneless but it will be a lot easier for you. If you want to strip it off of the bones. It is up to you. Here is the recipe.
Ingredients:
3 lbs. pork
3 Tbsp. of onion flakes
1tsp. salt
1tsp. oregano
1tsp. chili powder
1 tsp. garlic powder
1 tsp. ginger
1 cup worchestershire sau
1 cup of dark brown sugar (If you do not have brown sugar you can add 2 cups of white sugar to 1-3 Tbsp. of molasses to create you brown sugar. You can make it as dark as you would like by adding the molasses.) Mix all ingredients together except meat, then pour the ingredients over the meat as shown below. I usually do this frozen so as it cooks the liquid grows. I cook it in my crockpot on High until the meat looks done. You can check it with a fork. It takes approximately 6 hours. When the meat is done take it out and shred it. If it does shred easily it is not done enough. After it is all shredded you put it back in the pot to simmer for several more hours. You can add another 1/2 cup of brown sugar and a 15 oz. can of any enchildea sauce that you like. I prefer the mild red sauce. Sometimes I don't have the sauce so I just add the sugar and we enjoy the meat. It is all up to you and your taste.
