Perfect Pie

My favorite Apple Pie
This is my favorite pie, because I have finally succeeded at making a good pie. This is the recipe:

Crust:
3 cups of flour
1 tsp. salt
1 1/3 cup of shortening

Put all ingredients above, in a bowl and crumb together. Make it look like there are little marbles in the bowl. Mix extremely well, then mix the next 3 ingredients together in another bowl. Pour it in the bowl with above ingredients. Mix carefully until all the flour mixture is moistened.

1 egg
1tsp. vinegar
6-7 Tbsp. of cold water

Makes 3-4 9" pie crusts or 2 pie crusts that have tops on them. Roll out crust and put into a pie shell. Make sure the crust is pushed down well and the crust rests on the top lip of pie pan.

Pick out tart apples, such as yellow delicious or lodi. Or pick your favorite tart apple. Filing: 5 cups of apples, 1/4 cup sugar, 1 pinch of nutmeg, 1/2 tsp. cinnamon, 1-1/2 tsp. of lemon juice and 1/4 cup of flour. Mix all together then cook on the stove until all ingredients are mixed together well. You will need to bring it to a boil, but stir constantly, because the ingredients will stick to the pan. By cooking it before you put into the shell your apples will not be chunky., after the pie is cooked. Pour the mixture into pie pan. Slice 1 tbsp. of butter on top of pie. Now you need to roll out some more pie crust. Roll into a round. Make sure the top crust covers the pie pan with about 1/8 of an inch over other shell. Lift up bottom crust and tuck top crust under. Then make a fancy design by twisting the dough with your fingers. Remember practice makes perfect. Bake on 350 degrees for 50 minutes or it may take an hour. Make sure the pie is golden brown.
